Q: Could you cut this with scissors or xacto?

Yes, you can. I've used both the scissors (to cut into smaller pieces to put onto my mat) and used the Xacto knife to cut out what my Explore Air couldn't.

Q: Are these so thin that glue will show through if simply applying to another piece of wood?

You can use glue. It does not show. I use veneer a lot, glue it, paint it and never have issues
