Chilorio is a dish original from the state of Sinaloa in northwest Mexico. It is made from shredded pork, which is seasoned with chile pasilla, garlic, cumin, oregano and salt. Then it is cooked with special lard. This recipe has been known for about 300 years and is believed to have been used as a means of preserving stewed meat, since condiments act as natural preservatives like pork lard, in the same way as a sausage.
